This summer tomato tart is the perfect recipe for tomato pie when lots of fresh, fragrant tomatoes in the garden. The recipe for tomato pie is one of my family and friends most requested dishes.
The tomato pie is baked by my best ever recipe tomato sauce with eggs and Parmesan cheese. A delicious cake is versatile. Served hot with a salad is a perfect dinner dish or light meal. Cold, very well in a lunch box or a party or picnic food. I like salted anchovies and decorate the cake with some black olives in cans, but that's optional.
