Ingredients:
- 4 oz / 100 g soft butter
- 8 oz / 225 g icing sugar
- 3-5 tablespoons brandy or cognac
Preparation:
- Place the softened butter in a large saucepan. Electric hand whisk until light and creamy.
- Add the icing sugar and beat again until sugar is included.
- Add to taste the brandy or cognac and mix well. If too much brandy is added, the mixture may curdle. If this is the case, do not worry, just more icing sugar until the mixture binds.
- Pour the butter into a bowl, cover and refrigerate until ready to use.
