A classic tea time treat or dessert should be an apple pie, but add, make fresh raspberries, an Apple Pie and Blackberry and you have a winner, have a cake with the beauty of the late summer filled. Fat mature oozing their purple juice slightly in delicious soft acid, melting apples and sugar. This recipe for Blackberry and Apple Pie is quick and easy and ensures perfect results every time. Use Bramley cooking apples or better filling, eat apples soften and not too soft in the same way. If you do not have to cook the apples by hand, and then opt for a sharp like a Granny Smith apple.

Ingredients:
- Pastry shop
- 7 purpose oz/200g / flour
- Pinch of salt
- 1 stick butter / 110g, diced or an equal mixture of butter and lard
- 2-3 tablespoons cold water
- Filling
- 1lb/450g cooking apples, peeled, cored and quartered
- 2 tbsp lemon juice
- 4-6 tablespoons cold water
- 5 Fresh oz/140g ripe, washed and cleaned
- ½ cup sugar / 100g
- Butter ¼ stick/25g
- Milk glaze
Preparation:
- Mix the flour, butter and salt in a large bowl clean.
- Rub the butter into the flour with your fingers until the mixture resembles fine breadcrumbs, working as quickly as possible to prevent the mass is heated.
- Add water to the mixture and stir with a large knife until the dough binds cold, add more cold water a teaspoon at a time if the mixture is too dry.
- Put the dough in Saran film / transparent and refrigerate at least 15 minutes to 30 minutes.
- In the meantime, cook the apples with lemon juice and water in a large pot until soft. Add sugar to the cooked apples and berries. Remove from heat and add the butter and let cool.
