Fresh Apricot season is short and a way to extend the enjoyment of this wonderful fruit in this recipe apricot apricot liqueur. It is so easy to do and come the dark winter months, when the bottle is opened, you will be glad that you did. The liquor is prepared, after one month, but is maintained for many. So what actually when apricots are in season in August, Christmas is the perfect time to open it.
Preparation time: 20 minutes
Total time: 20 minutes
Yield: cure for 5 days
Ingredients:
- £ February 1 oz/500g apricots, halved, seeded and kept on one page
- April 1 teaspoon spice powder (see notes below).
- 1 pounds sugar 2 0z/500g
- 1 liter of dry white wine
- 20 fl oz / 600 ml Gin
Preparation:
- Put the apricot jam in a saucepan the spice mixture and mix well. Sugar and wine and mix again.
- Bring to a boil, stirring frequently, until the sugar dissolves. Remove from heat and add the gin.
- Cancel to remove the stones and the kernel core / center. Remove the skin of the kernel then add the apricots.
- Cover the pan and set aside completely for 5 days.
- Sterilize and dry for 2 or 3 wines or bottles with screw cap.
- Spread apricot mixture through a fine sieve or piece of muslin into a large bowl (hold apricots - see note below). Press the mixture well to remove as much juice as possible. Pour., The liquid in the bottle, seal and label
- Wait at least one month before the opening, but as with all the alcohol that will improve with keeping. Christmas is a great time to open it.
- Note: Please note the soaked apricots. You can use them in a dessert or ice. It can also be used in freezing and Gammon and apricot recipe for Christmas.
What is allspice?
This recipe is one I have all the time to do when I lived in France, where it is used very popular and common. It means four spices (4 species).There are two types of the four condiments; sweet and salty. Douce is used most commonly used in the kitchen and savory baked goods, meat, curing etc for this recipe liqueur mixture of sweet spices used.
Here is a general recipe if you want four spices at home.
- 2 tablespoons ground cloves
- 2 teaspoon allspice
- 2 tsp grated nutmeg
- 1 teaspoon ground ginger
If you want to replace a delicious spice mixed with all four teeth allspice and white pepper and to a fine powder and then with nutmeg and ginger.
