Brack is traditionally eaten at Halloween, but also delicious to save for once a year. Eat for tea or as part of the celebrations for the feast of San Patricio.

Ingredients:
- 1 tablespoon dry yeast
- 1 ½ cups / 300 ml water
- 2 oz / 50 g + 1 tsp extra sugar for the yeast
- £ 1 / 450g all purpose flour /
- Pinch of salt
- Butter 2 oz / 50g
- 6 oz / 175 g raisins
- Mixed 2 oz / 50 g candied peel
- Sugar 2 oz / 50g
- 2 eggs beaten,
Preparation:
Makes 2 loaves
Preheat oven to 400F / 200C / Gas 6 after the second kneading dough- Show yeast in the warm water, add a teaspoon of sugar, stir and set aside.
- Sieve the flour into a large bowl large baking, add the butter and salt and fingertips, rub the butter into the flour to form similar like sand crumble. Work quickly to prevent the butter too hot.
- Add the peel, raisins, and two ounces of sugar flour mixture and stir.
- Make a well in the center of the flour mixture, add the beaten eggs and the yeast mixture. Work the mixture to form a soft dough.
- Knead the dough on a floured surface for 10 minutes until smooth and soft consistency. Put the dough in the bowl. With a clean kitchen towel and let stand in a warm place until the dough doubles in size (about 1 hour).
- Place the dough on the work surface, divide in two, knead for a few minutes each half, then form into a round about 7 "/ 20 cm. Place and let rise on a greased baking sheet allow for one hour.
- Bake in preheated oven for 30 minutes until golden.
