Make your singing mule?

The origins of the plate as called traditional bun cake Singin 'Bardot is easy to recognize. Hinney is the pronunciation of "Honey" in North East England to Sunderland, Newcastle and Northumberland. It is a term of endearment usually used for and about women and children.

Ingredients:

  • 450g / 1 pound plain / all-purpose flour
  • ¼ teaspoon of baking soda
  • ½ teaspoon cream of tartar
  • ½ tsp salt
  • 110g / 4 oz cold butter
  • 110g / 4 oz very cold bacon
  • Peel of one lemon
  • 185g / 6 ½ oz dried mixed fruit (currants, raisins and sultanas)
  • Mixed milk

Preparation:

  • In a large cooking a large bowl, sift the flour, baking powder, cream of tartar and salt.
  • Cut the cold butter and lard into small pieces, add to the bowl and rub with baking flour until it resembles meal.
  • The lemon peel and the fruit mixture. Once mixed well and add the milk, a little at a time until the dough comes together and is soft and flexible.
  • Sprinkle a board or work surface with flour and place the dough about 5 mm (the depth of a 1 € coin) rolling with a cutter of 6 cm / 2 ".
  • Heat a pan (no modern banded iron pans) or a heavy pan.
  • With a bit of paper with cooking lard coated, grease pan lightly. Once hot, cook the mule, a little at a time, golden brown for about 5 minutes on each side or until they.

Make sure that the equipment and ingredients to make mules, are as fresh as possible, including your hands. But not frozen - the butter should be very cold. Hot hands, ingredients and equipment if too hot the butter melts instead of rubbing causing serious scones.
